This is a Thanksgiving favorite for my family! We love sweet potato pie & sweet potato casserole! I know everyone loves pumpkin pie! But sweet potato pie is just as delicious! Personally, I prefer the taste of sweet potato pie over pumpkin. It could be the New Orleanian in me.
It’s sweet, buttery and flavorful! It’s not too soft like a custard and at the perfect thickness. The texture and taste is perfection! It’s the crème de la crème of sweet potato pies. Best of all, the pie is easy to make and yields two pies. So you have more pie to enjoy! First, you start with 2 1/2 cups of mashed sweet potatoes. You add the sweet potatoes to a mixer with margarine, coconut milk, sugar, vanilla, cinnamon and salt. Blend everything until smooth. Transfer sweet potato mixture to two pie crusts. Bake in the oven at 350 for 30 minutes and then enjoy this delicious dessert with your family!
This Thanksgiving will be a little bittersweet for my family. I’m looking forward to spending time with my family while enjoying good food. But this will be the first Thanksgiving without my aunt. Growing up, she was always there for us and at every family gathering. She recently had a stroke, and it is not looking good for her. She has inspired me so much. She’s the one that planted the seed of grad school in my mind. She was an educator and a second mom to her students for the majority of her life.
She was one of the first blacks to go to Loyola’s grad school. After receiving her masters, she fought to get a scholarship to pursue her Ph. D. She did all of this in the 60s being a black woman. She is the strongest and smartest woman that I know. She has battled cancer and won! She has many accolades and has helped so many people in her life. I inspire to be just as strong as “Tee”.

- 2 ½ cups of sweet potatoes, mashed
- 1 cup of brown sugar
- ½ cup of coconut milk
- ¼ cup of pure cane sugar
- ¼ cup of cornstarch
- ¼ cup of earth balance, soften
- 1 tsp. of cinnamon
- 1 tsp. of vanilla extract
- Pinch of salt
- Place skinned, peeled sweet potatoes in a large pot and add water. Bring water to a boil and boil potatoes until soft.
- Mash sweet potatoes and add to a stand mixer.
- On a medium to high speed, add sugar, cornstarch, cinnamon, vanilla extract, salt, earth balance and coconut milk.
- Beat until smooth.
- Transfer mixture to pie crusts.
- Bake at 350 degrees F for 30 minutes.
- Let cool and enjoy!
